This Dry Kalamata Olive is an unusual variety in Australia. That’s why you don’t see them often, but they are a beloved staple of the Greek diet. These olives are delicately marinated in Moroccan spices (close from Ras El Hanout) and are perfect for cooking.
The flavour is different from the original as our olives have a distinctive soft texture.

Following traditional family process, we reduce to the maximum the salty or bitter taste.
Most of the time olives are process with vinegar. We don’t want vinegar!
So we apply a natural treatment to rinse our olives before marinade them. It will deliver you a nice and smooth flavour that you could not find in a classic olive table.
History & Characteristic
The Kalamata olive is a large purple olive named after the city of Kalamata in the southern Peloponnese, Greece.
They are usually preserved in a brine made out oil and water with no added preservative, to keep their characteristic intact. Which are rich fruity flavours.
The olives are matured naturally on the tree and contain no colours or stabilizer.
They are a medium/large almond-shaped olive, purple-black in colour. The olive is firm to medium soft. Very juicy with a smooth, meaty texture and a rich, distinct olive flavour.
They are an excellent source of iron, fibre, calcium, and vitamin A.
